Faced with an excess of garden produce, we began searching for new ways to preserve our bounty.

Enter, the Harvest Right freeze dryer.

We quickly discovered that with freeze drying, we can take food preservation to a whole new level.

But it hasn’t always been smooth sailing…

In this review, we cover what we love about our Harvest Right freeze dryer, what we can live with, and what broke, to help you decide if it’s a worthwhile investment for you.

Why a Harvest Right Freeze Dryer?

We were looking for a reliable way to extend the shelf life of our garden produce and eggs, without compromising quality. A freeze drying machine not only preserves flavor and nutrients but also greatly extends shelf life – by up to 25 years!

Plus, Harvest Right is a well established and trusted name in the home freeze dryer market.

Whether we’re dealing with a glut of tomatoes or an unexpected influx of zucchini, the Harvest Right freeze dryer handles it efficiently, turning our homegrown produce into long-lasting, easy-to-store meals.

The freeze dryer has also helped us take our long-term, emergency food storage to a whole new level!

Harvest Right Freeze Dryer
  • Freeze dry up to 10,000 lbs of fresh food every year.
  • Preserve your gardens harvest & prepare for emergencies.
  • Make your own camping & hiking meals.
  • Freeze dry your own pet food.

Buying a Harvest Right Freeze Dryer

When considering a Harvest Right Freeze Dryer, several factors come into play. Here we will lay out the key points, which will hopefully help make your decision easier!

Initial Cost Outlay

We purchased a medium Harvest Right freeze dryer with the upgrade to an oil-free pump in early 2022. Ours is now an outdated model with only 4 trays.

The current equivalent is the Home Pro Medium freeze dryer which has a base cost of about $3,200 but with the oil-free pump will set you back around $4,700 USD.

This newer model includes five trays and can freeze-dry up to 3,000 lbs of food per year, assuming it’s running almost non-stop.

While the initial cost might seem steep, keep in mind the long-term savings and the value of preserved food. It’s an investment in self-sufficiency and food storage security. You can read my full cost analysis of the Harvest Right freeze dryer here.

Our medium Harvest Right freeze dryer has 4 trays, the updated medium model now has 5.

Included Accessories

Included in the purchase price for the medium freeze dryer was a set of four stainless steel trays (you get 5 with the latest model), a guide to freeze-drying, 50 Mylar bags, 50 oxygen absorbers, and an impulse sealer.

With these accessories, we had everything we needed to start freeze-drying right away, but we have purchased extra accessories along the way. Extra trays, tray lids, tray dividers and more Mylar bags and oxygen absorbers have all been added to our gear list.

Impulse Sealer Included with Freeze Dryer
A Harvest Right Impulse Sealer is included in the kit and is necessary to seal the Mylar bags.

Additional Costs

Beyond the initial expense, operating costs can’t be overlooked. Electricity usage is about 33 kWh per batch, which based on the average U.S. electricity rates in June 2024 of $0.18 per kWh equates to about $5.94 per batch.

You can adjust this to get a cost estimate for your batches based on what your own per kWh electricity cost is.

Maintenance includes replacing vacuum pump oil if not using an oil-free pump. Then, there’s ongoing storage costs for mylar bags and oxygen absorbers.

Factoring these in, the costs add up. But think about the cost difference when compared to store-bought freeze-dried foods, and like us, you may decide it is worth it.

Delivery & Packaging

The delivery experience was smooth. The freeze dryer arrived on a sturdy wooden pallet with no damage to the boxes, the machine, or any accessories.

It is always a relief when something this hefty arrives without a scratch – especially when you are shelling out thousands of dollars!

We had a bench set up ready in our garage, but needed to get a dedicated power outlet installed after delivery.

Initial Setup

We hit a small snag with the setup, discovering we needed a dedicated power outlet only after the dryer arrived. Luckily an electrician quickly solved the problem for us, but it’s a reminder to prep the space first.

Once that was sorted, setting up was straightforward following the included instructions. Our tip is to place the freeze dryer where the noise of the pump won’t disturb you and have a sturdy bench ready – ours is in the garage.

This bit of prior planning can turn what might seem like a big ordeal into a simple plug-and-play process.

What We Love About Our Harvest Right Freeze Dryer

Preserving Our Own Food for Year-Round Use

Growing a ton of fruits and veggies in our garden is rewarding, but we often have gluts of certain produce that means we can’t eat everything before it spoils.

Thanks to the Harvest Right Freeze Dryer, we can preserve this extra produce and enjoy it all year round.

We’ve got a great stash of organic, spray-free food we can trust because, let’s face it, even “organic” from the store isn’t always what it seems.

Plus, our chickens are prolific layers, and freeze-drying any extra eggs saves us during their off-laying seasons.

Building Our Long-Term Food Stores for a SHTF Event

It’s wise to prepare for emergencies but stocking up on commercial freeze-dried meals can quickly get expensive. They are also often loaded with ingredients that we would rather avoid.

By using our Harvest Right Freeze Dryer, we save money and get to use our garden’s excess produce. This means we have managed to build a reliable food reserve, knowing exactly what’s in each meal.

Fried rice is an easy-to-make meal we make a lot of for long-term food storage.

Easy Set-and-Forget Cycles

Our schedules are hectic, and who wants to check on a freeze dryer in the middle of the night?

By setting our freeze dryer to have a default 24-hour extra dry time, we can load it up and walk away, knowing it’ll be ready when we are.

No late-night or mid-workday dashes to the garage to empty the freeze dryer and package up our food. A lesson we learned the hard way when our first batch of food finished in the middle of the night!

Extra Dry Time Setting
Setting the extra dry time to a default time of 24 hours means we can package our food when it suits us.

Great Customer Support

Dealing with customer support can be a pain, but not with Harvest Right.

We’ve had a few hiccups (a USB board here, a screen there) but calling them has always had the issue resolved quickly.

Plus, that one-year full warranty and limited extended coverage on essential parts give us extra peace of mind.

We do recommend that you skip the ticket system if you’re in a hurry though, and just give them a ring.

Potential Disadvantages of a Harvest Right Freeze Dryer

While the Harvest Right freeze dryer has a ton of benefits, there are some disadvantages you should consider before whipping out your credit card.

Initial & Ongoing Costs

Investing in a Harvest Right freeze dryer isn’t just about the upfront cost. Currently a medium model with the premier oil pump will set you back about $3,200.

Spreading this over 10 years, we’re looking at $320 annually.

Running the machine consumes about 33 kWh per cycle. At an average rate of $0.18 per kWh, each batch costs us nearly $6 in electricity – this may be more or less for you depending on where you live.

We have worked out that each meal costs us roughly $0.65 to store – $0.50 per 8″ x 12″ Mylar bag which fits two meals (making the cost $0.25 per meal), and $0.40 for each oxygen absorber.

Then there are other costs like vacuum pump oil ($16 per year) and any accessories you buy. We have purchased additional trays, tray lids and tray separators.

Freeze Dryer Accessories
Extra trays, tray lids, tray separators and extra Mylar bags and oxygen absorbers.

If you have solar your electricity costs will decrease, and Mason jars are another storage option which will cost more upfront, but may save you money long-term.

Some costs you just can’t skimp on. For example, one mistake we made early on was purchasing cheaper Mylar bags and oxygen absorbers from Amazon – they are sitting in our shed to this day!

As soon as we opened the package we could feel how flimsy the bags were compared to those provided by Harvest Right and were not convinced they would exclude the oxygen as required for long term storage.

Noise & Space Requirements

Finding a home for it can be tricky. The medium freeze dryer takes up a good chunk of space, measuring 19″ W x 25″ D x 29″ H, and weighing a hefty 127 lbs.

And don’t forget, you’ll need extra room for the pump and accessories.

We’ve found that a sturdy bench made of food-grade stainless steel works well, especially with its lower shelf for our trays and storage equipment.

And then there’s the noise. The freeze dryer is not exactly whisper-quiet so having it running in your kitchen would be very disruptive.

We’ve resolved the noise issue by relocating ours to the garage. With the door closed, it’s manageable but takes up quite a bit of real estate.

Everything fits nicely on our 24″ x 72″ stainless steel bench.

Preparing the Food Can be Time Consuming

Freeze-drying food involves more than just tossing it into the machine. We need to spend time cutting fruits and vegetables into the right sizes, blanching as needed and preparing meals.

Plus, food should be pre-frozen to prevent any messy accidents and reduce the overall time spent in the freeze dryer.

This prep work can be quite time consuming, especially when dealing with large quantities.

One way we have streamlined the process was by purchasing a Breville Sous Chef food processor.

Using the S-blade attachment makes short work of chili peppers and turmeric, while the dicing function has been a life-saver when chopping huge batches of onion, carrot and celery to make mirepoix.

  • French Fry Cutting Disc
  • Whisking Disc
  • Mini Blade & Dough Blade

Long Batch Cycle Time

Patience is a virtue when it comes to freeze-drying. Each batch can take anywhere from 20 to 40 hours to complete. This means if we’re running back-to-back cycles, the process can easily span multiple days.

For those of us wanting to process large harvests quickly, this extended cycle time can be a bottleneck.

Once the machine is running, it’s a set-and-forget scenario, but knowing that it’s tied up for nearly two days can be frustrating.

Purchasing extra freeze dryer trays has helped us to overcome this bottleneck to some degree. We can process large batches of produce in one go (while it is fresh and the kitchen is a mess) and put 12 trays worth of food in the deep freeze.

Once frozen, we run the three cycles back-to-back before beginning the whole process again.

Cost VS Value

Extending Our Harvest

Growing and eating our own organic fruits and vegetables always feels so rewarding, and with the Harvest Right freeze dryer we can enjoy our homegrown produce long after the growing season is over.

We’ve found that this not only reduces our grocery bill by eliminating the need to buy organic produce, but also ensures we know exactly what’s in our food.

Even though the initial investment is high, the long-term savings and peace of mind about food security make it worthwhile for us.

Maximizing Our Egg Production

Our chickens lay more eggs than we can consume fresh.

Thanks to the freeze dryer, we now have a store of freeze-dried raw eggs ready for those times when our girls aren’t as productive.

It’s comforting to know that we have a stash of nutritious eggs, especially during off seasons.

It means we are maximizing the value we get from our chickens, while ensuring we’re never short on eggs for breakfast or baking.

Prepping for an Emergency

Stocking up for emergencies is a priority for us, whatever form they may take.

Instead of buying expensive commercial freeze-dried meals which often contain ingredients we prefer not to eat, we use our freeze dryer to prep our own meals and meal ingredients.

This way, we save money, reduce waste by using our garden’s excess, and control exactly what goes into our food.

Having a stash of healthy, homemade emergency food ready for unexpected situations offers great peace-of-mind.

Easy Camping Meals

Freeze-dried meals are perfect for our camping and hiking adventures.

They’re lightweight, easy to pack, and we know exactly what’s in them. No more worrying about the mystery ingredients in store-bought camping foods.

Our homemade versions taste better and are healthier. A standard in our backpack on any hiking or fishing adventure is a pouch of freeze dried fruit and some freeze-dried banana protein bars (pureed banana, yogurt, cacao & protein powder – yum!).

Harvest Right, We Have a Problem

Even the best tools have their hiccups, and our Harvest Right freeze dryer is no exception.

We’ve faced our share of bumps but found solutions that kept us moving forward.

Software Update Gone Wrong

Our first hiccup came from a software update that promised a new candy mode.

Sounds sweet, right? Well, not so much.

The update left our freeze dryer unusable, and we couldn’t roll back to the old version. Talk about frustration.

Luckily Harvest Right support quickly shipped us a new USB board and touch screen which got us back up and running.

Now we adopt the, “if it ain’t broke, don’t fix it” mentality when it comes to updates since we discovered we weren’t the only ones to face this issue.

Replacement Screen and USB Board

Faulty Oil Free Pump

Next up, the oil-free pump. About three months into using it, the pump failed, and we struggled to get a proper vacuum.

Harvest Right replaced it, and we switched to the premier oil pump, even though we had to cover the postage.

The swap was worth it. The premier pump runs quieter, and changing the oil is a non-issue.

Given the choice again, we’d go for the premier oil pump every time. The calm hum of it working right makes all the difference.

Touch-Screen Issues

Then came the touch-screen troubles. First, it didn’t respond. Then, it seemed to have a mind of its own, thinking we pressed a different button every time.

Following Harvest Right’s advice, we opened up the dryer (a handy skill we’ve acquired) and loosened some screws holding the screen.

Voilà, problem solved.

With all the fixes we’ve done, opening the machine’s protective case almost feels routine now.

Our Experience With Customer Support

We’ve had our share of calls to customer support, and they’re always helpful.

If the issue is urgent, calling gets quicker results than submitting a ticket.

The one-year full warranty in the US is reassuring, covering us for mishaps like replacing the USB board, screen, and oil-free pump.

They’ve always resolved our problems, making the bumps along the road a lot smoother.

Oil Free VS Premier Oil Pump

Harvest Right Premier Oil Pump and Oil-Free Pump
Premier Oil Pump (left) VS Oil-Free Pump – 2022 Version (right)

Choosing between an oil-free pump and a premier oil pump for our Harvest Right freeze dryer was a tough decision at the time. But with the benefit of hindsight and having operated both, we would absolutely choose the premier oil pump if we had a do-over.

Both options have their pros and cons, and you will have to decide what suits your needs best, but for what is is worth, here is our 2 cents.

Cost Difference

The oil-free pump adds about $1,500 to the freeze dryer’s price tag. Comparatively, the premier oil pump is included as standard in the retail price of the machine (and costs half as much to replace).

For those on a budget, the premier oil pump’s upfront cost seems much more reasonable. It’s a significant saving, one that could go towards purchasing more food for preservation and storage equipment such as Mylar bags.

But, if the lack of maintenance appeals to you more than the extra cash in your pocket, the investment in the oil-free option might seem justifiable.

Noise Difference

Noise can make or break kitchen equipment, especially when it’s running for hours at a time.

The oil-free pump boasted many benefits but came with a downside – noise. It’s loud, and not in the charming way that a bustling kitchen might be. It’s more like the constant hum of a vacuum that’s persistent enough to drive you out of the room.

On the other hand, the premier oil pump operates at a quieter hum, more akin to white noise rather than an invasive buzz.

So, if tranquility is a priority during those long freeze-drying cycles, the premier oil pump might win this round.

Maintenance

Maintenance, while a chore, can be a deal breaker for some. The premier oil pump requires oil changes every 20-25 batches, a task that takes just a few minutes and honestly, barely interrupts the flow.

On the other hand, the oil-free pump is a “set it and forget it” option. No oil changes, just consistent operation without the fuss. But, given the hefty price tag, it’s a trade-off between time and money.

If you don’t mind rolling up your sleeves for a bit of upkeep, the premier oil pump’s simplicity and lower cost might be more attractive.

Cleaning & Maintenance

Cleaning the Freeze Drying Unit

Keeping the freeze dryer clean has proved pretty simple for us. Once the unit defrosts, we grab a clean, damp cloth and give the chamber and trays a once-over.

We double-check for any stuck-on bits or spills every so often. Fortunately, our thorough food prepping has saved us from any messy disasters like food explosions!

Correctly pre-freezing food is the most important step to keeping the chamber clean, along with not freeze drying foods you shouldn’t, but if something does go wrong, warm water and some elbow grease should do the trick.

Maintaining the Pump

Oil changes can seem mundane, but keeping the pump in good shape is worth it.

Our premier oil pump needs an oil change every 20-25 batches, but it only takes a few minutes.

We use Harvest Right Oil but you can also use Robinair Premium High Vacuum Pump Oil, or JB Industries Black Gold Vacuum Pump Oil.

Would We Buy Again?

Even though we have experienced a few issues with our Harvest Right freeze dryer, customer support quickly got us back on track each time.

For us, the advantages such as preserving surplus garden produce and taking our emergency food stores to a whole new level, vastly outweigh any inconveniences.

Given our experience, the decision to purchase a freeze dryer again if we had a do-over is a no-brainer, we would get it every time.

Who is a Freeze Dryer Ideal for?

The Harvest Right freeze is an obvious fit for gardeners, homesteaders, and preppers. But here are some other people who might benefit from owning a freeze dryer:

  • Chefs: A freeze dryer opens up a range of exciting new ingredient ideas.
  • Hikers: Freeze-dry your favorite meals to consume out on the trails.
  • Hunters: Freeze-dry that extra game once your freezer can take it no more.
  • Chicken owners: Freeze-dry those extra eggs and special treats for your girls.
  • Athletes: Make your own nutrient-dense snacks for training.
  • Bulk shoppers: Preserve those special buys to save in the long run.
  • Home cooks: Experiment with different textures and flavors in your cooking.

  • DIY Enthusiasts: Create ingredients for beauty products and herbal teas.
  • Young Families: Make your own baby food and snacks for your kids.
  • Allergy sufferers: Create a supply of allergy-friendly meals that you can grab in a pinch.

Just keep in mind the following:

  1. Noise: The freeze dryer isn’t whisper-quiet. If you have a baby that’s a light sleeper, or if you are, putting it in a separate room might be wise.
  2. Space Requirements: This machine demands space. Imagine fitting into your kitchen another small refrigerator! Best to find it a dedicated spot in a laundry or garage if possible.
  3. Power Usage: Running the freeze dryer draws considerable power, affecting your electricity bill. It’s something to weigh, especially if you’re budget-conscious.
  4. Need for Proper Food Preparation: Prepping food before freeze-drying takes time. Chopping, blanching, and arranging food trays can become a routine.

For those ready to tackle these considerations, the Harvest Right freeze dryer will reward you with efficient long-term food preservation and a solid emergency food reserve.
